Buckeye's


Being from Ohio, I have to represent!  These little beauties show up at every function that involves food in The Buckeye State.  They're sold at farmer's markets, bakeries, candy shops, coffee shops...they're virtually everywhere in Ohio.  Enjoy a little taste of my home state!

6 cups powdered sugar
1 1/2 cups peanut butter
1 cup butter, softened
1/2 tsp. vanilla
4 cups chocolate chips
vegetable oil

Mix all ingredients together, except for chocolate chips and vegetable oil.  Roll peanut butter mixture into bite size balls and place on a cookie sheet.  Insert toothpicks into each ball.  Place tray in fridge for 30 minutes. Melt chocolate in a double boiler.  Gradually add tiny amounts of vegetable oil to chocolate until chocolate is thin and runny.  Dip peanut butter balls 3/4 of the way into the melted chocolate.  Place back on tray.  Do not let buckeyes touch one another.  Refrigerate until ready to serve or until chocolate is hardened.  Remove toothpicks before serving.
