Tuna Patties with Sour Cream Dill Sauce

Can you say budget friendly?!?!  This meal is nice and filling and tasty and eeeeasy on the wallet!  You can eat it on a bun or if you're trying to limit your carbs, get rid of the bun and just use a fork.  I was surprised at how yummy this was!

Tuna Patties:
2 (6oz.) cans of tuna, drained
3 cups of cornflakes, crushed to crumbs (makes 1 1/2 cups of crumbs)
1/4 cup mayo or miracle whip
2 medium green onions, sliced (optional)
1 tsp. yellow mustard
1 egg
vegetable oil

Sour Cream Dill Sauce:
1/4 cup sour cream
1/4 cup mayo or miracle whip
1 tsp. dried dill weed

For the Sauce:
Mix all of the ingredients together and set aside.

For the Tuna Patties:
Mix tuna, 1 cup of the cornflake crumbs, mayo, onions, mustard, and egg.  Shape the mixture into 4 equal size patties.  Coat the patties with the remaining 1/2 cup cornflake crumbs, pressing lightly to coat both sides.

Cover the bottom of a large skillet with enough vegetable oil to come half way up the patties (about half a cup).  Heat the oil to medium-high heat.  Cook the patties in the oil 2-3 minutes, turning once, until light golden brown.  Serve immediately with sauce.
