Vitamin C Bombs

What kid doesn't love a gummy fruit snack or a fun jiggly jello shape?!  Here is a recipe for a homemade treat your kids will love that is packed with Vitamin C, NO fillers, and no refined sugar. And you can use your little ones favorite 100% juice!  Apple, Orange, White Grape, anything!  My daughter LOVES Grape Juice so that's what we normally use.  Oooo, you can also get creative and mix some juices for a neat combo! 
*Note: This treat contains honey.  If your child is younger than 12 months, this treat is unsafe for your child.
 
3 cups 100% juice, any kind you like that is high in Vitamin C, divided
3 envelopes Knox brand unflavored gelatin
2 tablespoons honey
 
In a small saucepan, bring 1 1/2 cups of the fruit juice to a boil.
Meanwhile in a medium mixing bowl, mix together the remaining 1 1/2 cups of cold fruit juice with the unflavored gelatin until most of the gelatin has dissolved. 
Once the juice has come to a boil, carefully and slowly pour the boiling juice into the cold juice mixture.  Stir it until all of the gelatin has completely dissolved.  Add the honey and stir until the honey has completely melted into the mixture.
Now, you can go one of two ways.  You can pour the juice into fun little ice cube trays/molds (Ikea has some cute ones!).  Or, you can simply pour it into an 8 or 9 inch baking dish.  Either way, pour the juice into your desired container and stick it in the fridge for 4 hours or overnight.
