Chocolate Chip Cookies

Surprise, surprise!!  I'm posting another pregnancy related, sweet-tooth craving!  I have been SO loving me some chocolate chip cookies lately.  I came across this super simple recipe online and they are by far my favorite chocolate chip cookie.  Enjoy!

3/4 cup granulated sugar
3/4 cup brown sugar
1 cup (2 sticks)  butter, softened (real butter makes a HUGE difference, use it.)
1 tsp. vanilla
1 egg
2 1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup coarsely chopped nuts (optional)
2 cups chocolate chips (or your chip of choice; i.e. peanut butter, white chocolate...)

Preheat oven to 375 degrees.
In a large mixing bowl, mix together the sugars, butter, vanilla, and egg until well incorporated and fluffy.
Add the flour, baking soda, and salt and mix thoroughly.  (The dough will be stiff.)
Stir in the nuts, if using, and the chocolate chips.
Using a spoon, scoop out a cookie size ball of dough and form the dough into a tight-ish ball.  (This will keep the cookie fluffy instead of getting super flat while baking.)  Place the tight ball of dough on your baking sheet and space them 2 inches apart.  (I usually get 9 at a time on one sheet.)  Bake for 8-10 minutes or until the edges of the cookies juuuuust start to get brown.  Remove from oven and cool for 5 minutes on baking sheet before transferring to a wire cooling rack to cool completely.
