Salt Crusted Baked Potato

 

Baked potato bar night is one of my family's favorite dinners!  It's comfort food customized however you like.  And I'm here for it because it's SUPER easy!  If you've ever been to a Firebird's, this is a copycat of their famous baked potato!

Large russet potatoes (however many your family will enjoy)

Olive Oil

Sea Salt

Favorite baked potato toppings

Begin by preheating your oven to 400.

Line a baking sheet with foil and set aside.

Thoroughly wash and dry your potatoes.  Use a fork and pierce the skin all around each potato.

Drizzle a thick coating of olive oil over each potato and place them on the foil lined baking sheet.  

Now, the salt part can look excessive because well...it is.  But trust the process.  It's SO good.  Heavily sprinkle each potato with a crust of salt all over the entire surface.  

Bake the potatoes in the 400 degree oven for one hour.

Once the potatoes are fork tender, remove from the oven and allow to cool slightly.  Slice each potato down the center with a sharp knife and carefully pinch the ends and push them toward the middle to allow the inside of the potato to fluff out a little.  

Serve with your favorite baked potato toppings.  My family likes LOTS of butter, sour cream, cheddar cheese, and crumbled bacon.
