Honey Mustard Pork Loin Chops

Pork Loin Chops were on sale this month at Costco and we LOVE pork chops!  I recently acquired an old set of cast iron skillets that I've been dying to try out so I combined the two and a beautiful thing happened!  This recipe was born and it's delish!  You certainly don't have to use cast iron when you make this...so just excuse my excitement over that little detail.
 
The pork chops I bought were quite thick!  They were double the thickness of the ones in the picture (about 2 inches thick) so before you start cookin' pound them out a little bit with a meat tenderizer.

2 boneless pork loin chops
1 tsp. garlic powder
salt and pepper
2 tsp. olive oil
1/2 cup white wine (or chicken broth)
1/4 cup chicken broth
2 tablespoons dijon mustard (I used spicy brown)
1 tablespoon honey
1/4 cup heavy cream

Heat oven to 400 degrees.
Season the pork chops on both sides with the garlic powder, salt, and pepper.
Heat a heavy deep skillet to medium/high heat.  Add olive oil and swirl around to coat the bottom of the pan.  Sear the pork loin chops on both sides until browned. If yours are as thick as mine were, I let them sear for about 3-5 minutes per side.  If they're thinner, I would only let them go 1-2 minutes per side.  But use your meat thermometer to check for sure.
 
Once they're seared, transfer the chops to a baking dish and place in the oven while you make the honey mustard sauce. (Like I said, mine were VERY thick, so they needed the 400 degree oven to continue cooking.  If yours are thinner, they may not need to be in that hot of an oven.)

Now, to the same hot skillet you cooked the chops in, carefully add the white wine and stir; making sure you get all of the brown bits off the bottom of the pan.  Stir for 2 minutes or until reduced by half.  Add the chicken broth, dijon mustard, and honey.  Whisk to combine and continue cooking over medium heat another 2 minutes.  Whisk in the cream and cook until thickened; about another 2 minutes.

Return the pork chops to the skillet along with any drippings.  Turn the chops in the sauce so they are completely covered.  Enjoy!

*If you are making more than 2 chops, definitely double the sauce recipe.  It's VERY yummy!
