Roasted Potatoes


Roasted potatoes add a no fuss and hearty side dish to almost any weeknight meal.  With very few ingredients, it's economical and a favorite in our house.  And your oven gets to do all the work.  

Potatoes; russet, new, idaho...whatever, enough to feed your family
1 stick butter, melted
italian seasoning, enough to season all potatoes
garlic powder to taste
salt to taste

Preheat oven to 350 degrees.
Wash and dry all of the potatoes you will be using.  With the peels still on, cut each potato into bite size pieces.  In a large mixing bowl, melt butter.  Add chopped potatoes to the melted butter and toss to coat.  Transfer butter coated potatoes to a 9x13 baking dish.  Sprinkle liberally with garlic powder, italian seasoning and salt.  Bake 45-60 minutes, turning potatoes two or three times throughout the baking process, until potatoes have a thin layer of crispiness all over and are golden brown.
