Cream Cheese Frosting

This is the easiest, most delicious cream cheese frosting I have ever made.  Use it to ice good old fashioned sugar cookies, carrot cake, fruit, cupcakes...pretty much anything that needs a delicious frosting.

1/2 cup (1 stick) of butter; room temperature
8 oz. cream cheese, room temperature
2-3 cups powdered sugar (depending on how stiff/sweet you want it)
1 tsp. vanilla extract

With an electric mixer, mix the butter and cream cheese together, about 3 minutes on medium speed until very smooth.  Scrape down the sides and bottom of the bowl to ensure even mixing.  Add the vanilla extract and mix.  SLOWLY add the powdered sugar.  (Or learn the hard way and find powdered sugar all over your kitchen for months to come.)  Keep adding until you get to the desired sweetness and stiffness.
