Baked Sockarooni

Baked Socarooni.  Sounds cool...I know.  But it's so yummy and easy too!  If you like baked ravioli, then you will love Baked Sockarooni.  The name comes from it's "secret ingredient"...the sauce.  It's all about the sauce, Baby!  You can find it in most grocery stores...I normally buy it at that dreaded place called Walmart...so I'm sure if they carry it then you can find it at any chain grocery store or anywhere that carries Newman's Own products. Now, this recipe, like many of my recipes, can be made as big or as small as you like as there are not really any "quantities" of ingredients.  Use your own judgement of how much ravioli to layer, how much sauce you like, how much cheese you like...etc.  I like to make a decent batch of it so the hubs can have homemade lunches for the week.  But if you have a small family or don't care for leftovers, just use one bag of ravioli, and a lil' bit of sauce and cheese.  It's your dish...make it how you like it.

2 bags frozen cheese ravioli (Unless you shop at Costco, then buy one big bag and store whatever you don't use.)
2 jars Newman's Own Sockarooni Sauce
4 cups shredded mozzarella
(These amounts will make a large pan of Baked Sockarooni.  Scale back if you don't want a bunch of it.)

Preheat oven to 350 degrees.
Lightly spray a 9x13 baking dish with non-stick spray. Spread a thin layer of Sockarooni Sauce over the bottom of the pan.  Layer as much, or little, frozen ravioli in the bottom of the pan as you like.  Cover ravioli with a nice layer of Sockarooni Sauce.  Then sprinkle half of the mozzarella cheese on top of the sauce.  Repeat layers one more time, ending with cheese.  Bake for 30 minutes or until heated through and cheese is melted and bubbly.  Serve with salad and garlic bread.
