Cheesy Ranch Potatoes

Cheesy, ranchy, potatoey...mmmmm.  You don't even have to peel the potatoes for this dish.  It's as easy as it is yummy!  And my favorite part of this dish is that it's BEST if it's assembled the night before and stuck in the fridge to "marinate".  That lets the ranch dressing soak into the potatoes overnight and the flavor is out of this world.  Oh yeah!

6 medium potatoes, washed and cut into bite size pieces, skin ON
1 package dry ranch dressing mix
1 cup milk
1 cup mayo
2 cups mozzarella cheese
 
Preheat oven to 350 degrees.
Wash and cut potatoes into bite size pieces leaving the skin ON.   Add potatoes to large pot and boil until fork tender.  Drain and set aside.  In a medium mixing bowl combine dressing mix, milk, and mayo with a whisk until no lumps are left and mixture is creamy.  Spray 9x13 baking dish with non-stick spray.  Layer half of the potatoes in bottom of baking dish.  Drizzle half of the ranch mix over potatoes.  Add 1 cup of mozzarella cheese to top of potatoes.  Repeat layers ending with mozzarella cheese.  Bake 20-25 minutes until cheese is melted and bubbly.
